Project Gastrocamp - Kaluga 2021, famous Russian chefs created "Menu of Kaluga" based on local products of Kaluga. The regional gastronomy camp «Gastrocamp-Kaluga 2021» was held on territory of the Hotel «Ambassador Kaluga» from 21th to 27th of August. International Center of Wine and Gastronomy (ICWAG) is the developer of the project, the president of ICWAG was leading the work. Chefs, pastry chef and baristas from Moscow, Saint-Petersburg and Kaluga were invited to work on Gastrocamp. The main goal of the team was studying traditions and gastronomy specialists of the Kaluga Oblast and after visiting farm enterprises and factories, members of team needed to create special «Menu of Kaluga», recipes, which could be recommended for usage at catering establishments of Kaluga in the future. The Business Development Agency (Kaluga) was the partner of the project from the side of Kaluga region. The final tasting was organized on 26th of August on the territory of the hotel. The Governor of the Kaluga Oblast Vladislav Shapsha, Deputy Governor Chief of Administration of the Governor Karina Bashkatova, Head of Kaluga City Dmitry Denisov, Minister of Internal Policy and Mass Communication Oleg Kalugin, Deputy Chief, Office of Protocol Management, Governor’s Administration Olga Filippova, Stefan Perevalov, General Director of the "Business Development Agency'', General Director of the Hotel «Ambassador Kaluga» Irina Melnikova, hostellers, restaurateurs, farmers and journalists. Chefs-participants of the Gastrocamp were truly inspired by the quality of local dairy products, berries, rainbow trout, guinea fowl, champignons, potatoes... 27 authorial dishes and beverages were served on the final "table" of the tasting. Team of the Gastrocamp and Hotel «Ambassador Kaluga» showed great results of the work, though, it should be noted that the missions were quite complicated. Can you imagine preparing and serving 22 dishes and 5 beverages individually (648 servings) in only 2,5 hours!The Team of the Gastrocamp not only prepared and served dishes tasty and beautifully, but also named dishes and beverages in order to save an inextricable link between sites of their origin, names of cities and districts. So, this is how «Three forms of beetroot with goat cheese from Medyn», «Consomme from Kalugian guinea fowl with crepes and marinated eggs», «Oksk's jackfish with honey pumpkin mash, Medynsk butter and lemongrass», «Kalugian quartet. Two kinds of Kalugian pastila (apple and raspberry), two kinds oа cheese (Bogimovo and Medyn)», «Ice cream Bogimovo's milk with sauce from farm sea buckthorn berries with tutsan's flower»... On the development of dishes for «Menu of Kaluga» were working: Anton Salnikov (chef, Moscow) with 20 years of service. He interned in Michelin restaurants in France. He's a member of the international project "Russian Gastronomy Weeks". As well as founder and brand-chef of the corpotavive catering network «Technology of catering»; Rashid Rakhmanov (chef, Saint-Petersburg) with 19 years length of service. He's a member of the international project «Russian Gastronomy Weeks». He is also an Ambassador of the Perm Region cuisine; Ambassador the cuisine of Peru in Russia and Western Europe, owner of the award «Golden Peruvian Spoon-2018»);
Pozdnyakov Michail (chef «Territory of Hospitality», Kaluga) with over than 12 years length of service. He's an Silver Medalist of the Championship of Russia on the barbeque 2021, Participant of the culinary association «Chefs team Russia", member of the «Russian association of the barbeque», ex-chef of the Kiev Pechersk Lavra; Pavel Bozhko (sous-chef of the restaurant «Ambassador» of the Hotel «Ambassador-Kaluga», Kaluga). Participant of the competition «The best specialist in Kaluga», he presented a dish from proud flesh. Kalugian restaurant of the hotel «Hilton» won the award «Restaurant of the year» under his leadership. Elena Baklashova (chef-confectioner, Moscow) with 27 years of service. She's a member of the team of chefs from Moscow on the «Green Week» in Berlin(Germany). She's awarded with the Diploma of Moscow Mayor S. Sobyanin «For Contribution to Industry Development»; Elizaveta Baryshnikova (barista-coach, Moscow) with more than 10 years length of service. She's a member of the Specialty Coffee Association. She's an owner of qualifications: Sensory Intermediate; Brewing intermediate; Barista skills intermediate and Alexandra Kowalski (bar-manager, Moscow) Project of the International center of wine and gastronomy «Gastrocamp Kaluga - 2021» was invented to help developing gastronomy tourism and the hospitality sphere in Kaluga Oblast, to give some kind of additional impetus to movement of the individual farmers of the region. First results of the Gastrocamp, following the event: Hotel «Ambassador Kaluga» received two orders from Government of the Kaluga Oblast: Medyn-pie with goat cheese, beetroot plant and sour cream sauce by sous-chef P.Bozhko (Kaluga). Pavel aslo will participate in festival «Street Food» in Kaluga from 3th to 5th of the September, he will present his dish - pickle soup in Kalugian style with farm duck and Bogimovo's sour cream.
